PORK LIVER PATE

Prep time: 30 minutes

Cooking time: 15 minutes

Yields: 10 servings

 

Ingredients: 

 

1 pork liver
1/2 red onion
3 cloves garlic
bacon fat
thyme, rosemary and sea salt

 

Directions: 

 

Melt some bacon fat in a sautèe pan on medium heat.  Chop the onion and garlic, and add to the pan.  While that is sautèeing, cut the pork liver into 1 inch-ish cubes.  Add to the pan and continue at medium heat, stirring occasionally, until the meat is cooked through.  Toward the end when the meat is just about done, add about 1 - 1 1/2 tsp of fresh thyme, or 1/2 tsp of dried thyme, and 1 tsp of fresh rosemary or 1/2 tsp of dried rosemary, or to taste. Some people like it more thymey ;)  Salt to taste.  About 1/2 tsp.  

 

When the meat is cooked through, toss it all in the food processor until it is mush.  If you don't have a food processor, a hand blender will also work, it'll just take a couple extra minutes.  Goes well with plantain crackers, and veggies for lunch or a quick snack.

 

Notes: 

 

I just love love love liver patè, and it is so good for you!  Filled with vitamins and minerals, the best thing you can do for yourself when trying to get healthy is to eat organ meats.  Pork liver is not very "livery", especially in a patè with some nice seasoning and the addition of the bacon fat.

Give it a shot.  Worst thing that can happen is you don't like it and you have to invite some friends over to eat it!  Call me!  :)
