BREAKFAST SAUSAGE

Yields: 18 sausages

 

Ingredients: 

 

1 kg (2.5 lbs-ish) ground pork
1 bunch of green onions
1/2 tbsp dry thyme
1/2 tbsp garlic powder
1/2 tbsp dry sage
1/2 tbsp dry rosemary
1.5 tsp sea salt

 

Directions: 

 

 

Chop the green onions to small bits, and mix all ingredients by hand in a bowl, making sure that it is all mixed well together.  

 

Shape into patties, about palm size.  

 

Fry at medium heat in a stainless steel pan with some fat (bacon fat, tallow, lard, coconut oil...) on one side about 10 minutes, flip it over and cook on the other side about 5 minutes, or until done.  (if you're using a non-stick pan which I wouldn't recommend, they can be toxic! you probably won't need the fat, but it'll be nice for added flavour anyway).  You can also cook these on the grill.

 

Notes: 

 

You can make all of these patties and freeze them uncooked, or cook them and then freeze them.  These are great to have handy for busy mornings, afternoons or evenings when you don't have time to mix everything all up!  I froze mine wrapped in parchment, in packages of 2, so I can just take them out the freezer, defrost and then cook them up.  The trick is remembering to take them out the freezer the night before ;)  

 

This amount of ground pork made 18 palm sized patties for me, if your hand is bigger it may make fewer for you.  

 

The flavours are all quite nice together, and is a very satisfying breakfast, served with your favourite vegetable and hot beverage.
