BISON BURGERS - AIP

Prep time: 10 minutes

Cooking time: 10 minutes

Yields: 4 burgers

 

Ingredients: 

 

1 lb ground bison
4 button mushrooms, diced
1/4 sweet white onion, diced
2 small, or 1 large clove of garlic, pressed or finely diced
couple shakes of sea salt

 

Directions: 

 

Put the ground bison into a mixing bowl, dice the onion, mushrooms, and garlic and add to the meat.

 

Mix with your hands until well incorporated.

Next, form it into 4 equally(ish) sized patties, and put them on the grill

 

Cook until they have reached the desired done-ness (everyone's different!) and serve with some grill roasted veggies.  I did sweet potatoes in foil on the grill.  

 

Notes: 

 

The other day I went to the local Healthy Meats store to pick up some liver because I had a hankerin' for some patè.  Honest, I went in with the intent of just getting some pork liver!  I walked out with some chicken livers (no pork left), the ground bison, plus a bison liver (not sure what I will do with that yet!) and some organic chicken thighs.  Which were also quite nice cooked on the grill.

These burgers turned out SPECTACULARLY!  I love bison, but this stuff was better than average, the minimal seasoning that I put in with the meat made it just perfect!  My only condiment was some sliced avocado, as I still have not reintroduced nightshades, so couldn't have tomato salsa on it yet.  Soon though, my tomatoes in the garden will be ready in a month or so!  I really couldn't believe how yummy these burgers were, and even my Mum liked them.  She's not always so keen on game meats.  

 

I wonder if they'll ever get some moose meat in...?
