AVOCADO PUDDING

Yields: 1 serving

 

Ingredients: 

 

1 whole ripe Haas avocado, 1 tsp of raw honey, and whatever else you want to add. In this photo I added a kiwi fruit. Looks gross, but it was tasty!  I have also used pumpkin puree, cacao powder, carob powder, strawberries, raspberries...oh the possibilites are endless!

 

Directions: 

 

Slice and scoop the avocado and whatever fruit you're adding, and put them in a blender, or mini-food processor (big food processor if you're making more than one serving).  Blend until smooth.  Easy peasy!  Seriously, it tasted a whole lot better than it looks!

 

Notes:

 

I can't take full credit for this, I believe I first came across avocado pudding when I was "doing" Atkins, however I don't remember if there is an original recipe somewhere.  I love avocado pudding.  It's a healthy option, with beneficial fats, vitamins, and minerals.  Before I started the AIP, I used to make it all the time with 1 tbsp cacao powder, and 1 tsp of unpasteurised honey.  So creamy and good!  I am looking forward to when I can reintroduce chocolate, for this very reason :)

 

You can also make this pudding with avocado and a banana.  If you use a green banana, it's a yummy resistant starch dessert.  I have also used fresh pumpkin puree, and added maple syrup and traditional pumpkin pie spices like cinnamon, cloves, and nutmeg (substitute mace for nutmeg if you're follwoing AIP)

 

Be adventurous, just toss any ol' fruit or flavour in there and blend it!
